Jambalaya
2 Tbsp. oil
1 1/2 cup chopped onion
2 cloves garlic, chopped
1 green bell pepper, chopped
16 oz. can diced tomatoes
1/2 cup broth or water
2 cups cooked sausage, chicken, or shrimp
1 cup rice
1/2 tsp. thyme
1/2 tsp. salt
hot sauce to taste
1. Cook onions, garlic, and bell pepper in hot oil until lightly browned. Add meat and rice and cook until rice is coated in oil.
2. Add seasoning, tomatoes, and broth. Cover and simmer until rice is done, about 20-25 minutes.
